Chocolate Peppermint Rice Krispie Treats
Over here at Kortni Jeane, we are big fans of anything sugary, especially during this Christmas season. This recipe is the classic Rice Krispie Treat with a holiday {and chocolatey} twist! We've got you covered if you are needing to throw together a quick and easy dish for a Christmas Eve Party!
Start by melting the butter in a large saucepan.
Once completely melted, add in all marshmallows making sure they get completely covered by the butter. If you happen to add a few extra marshmallows... that's okay ;)
Add peppermint extract. The recipe only calls for 1/4 teaspoon, but if you're wanting a stronger flavor definitely add more.
Add 2-4 drops of red food coloring. Remember a little goes a long way and you don't want to over do it!
Once the marshmallows are completely melted, add in rice krispies one cup at a time. You don't want to add too many and make the rice krispie to marshmallow ratio off.
Mix all together.
**If you're wanting a stronger peppermint taste, you can mix in Andes Peppermint Crunch or crushed up candy canes to this mixture**
Line a 9x13 pan with tin foil and lightly butter the bottom and sides.
Evenly spread Rice Krispie mixture in pan.
Melt white chocolate chips 30 seconds at a time, stirring in between, until completely melted.
Drizzle white chocolate over rice krispies with a spoon.
Do the same thing with the milk, semi-sweet or dark chocolate.
Generously drizzle chocolate over rice krispies.
Sprinkle the Andes Peppermint Crunch on top.
Let the rice krispies sit and cool down before you cut them.
The great thing about lining the pan with foil, is that you can pull everything out in one fail swoop. It makes cutting squares so much easier!
